Crispy Baked Chicken Wings

Crispy Oven Baked Chicken Wings – bold BBQ flavored chicken with crispy skin outside, juicy meat inside and bursting with delicious flavor. Use a dry BBQ rub – no oil for the ultimate irresistible game day snack.

Chicken wings are a staple in my house – and not just on game day.

I streamlined my recipe to make is simpler – but with the same delicious bold BBQ flavor we’re looking for. Crispy skin, tender juicy chicken — these wings are A-Game ready.

Why I love this recipe:

Ingredients needed to make Crispy Baked Wings:

  • bone in chicken wings
  • baking powder (not baking soda)
  • salt and black pepper
  • your favorite dry BBQ rub (this one is mine!)

You’ll also need:

  1. large rimmed baking sheet
  2. aluminum foil
  3. wire baking rack (if you have one)
  4. nonstick cooking spray (for the rack)

How to make Crispy Baked Chicken Wings:

  1. Move oven rack to upper middle section. Preheat oven to 425 degrees.
  2. Line baking sheet with aluminum foil. Place wire cooling rack on top and spray with cooking spray.
  3. Pat wings dry really well using paper towels. This step is super important so the wings crisp and not steam. Add to a large bowl.
  4. In a small bowl, whisk salt, black pepper, 2 tablespoons of the dry BBQ rub and 1 tablespoon baking powder. Sprinkle seasoning over wings. Toss well until wings are well coated. Place on rack in a single layer.
  5. Bake 20 minutes. Flip to the other side. Sprinkle with remaining tablespoon of dry BBQ rub and return to oven for 20-25 minutes or until golden, crispy and cooked to internal temp of 165 degrees. Cook time may vary with size of wings.
  6. Wings are finished and ready to eat but if you prefer – transfer to large clean bowl, drizzle with BBQ sauce and toss to coat. Serve right away.

Tips for making Oven Baked Chicken Wings:

  1. Dry the wings really well before seasoning. I can’t stress this enough. Don’t be shy with the paper towels. Wings that are moist will steam – not crisp up.
  2. Use a wire baking/cooling rack if you have one. It helps the heat circulate around the wings and they’ll cook more evenly.
  3. Use a meat thermometer to make sure they’re cooked through.
  4. Eat as soon as they’re finished baking when they’re at their best.

Can I make these wings ahead of time?

Yes you can prep the wings ahead of time and refrigerate. For the best wings, bake just before serving.

Subs and variations:

  • Use drumettes or flats in this recipe. Cook time will vary if using all flats.
  • Use any store-bought dry BBQ spice rub you like best.
  • Make your own BBQ seasoning with smoked paprika, cumin, garlic and onion powders and a pinch of cayenne.
  • Feel free to slather these wings with your favorite BBQ sauce when they’re finished cooking!

Ingredients
  

  • 2 pounds bone in chicken wings drummys, flappers or a combo
  • 1 tablespoon baking powder not baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons your favorite dry BBQ rub Meat Church Brand (honey hog is my favorite)

    1. Hi Bridget – thanks for reaching out. These wings can be marinated up to 24 hours ahead of time. I wouldn’t go over 24 hours because it may affect the texture of the chicken. — Bernie
