Greek Goddess Dip

Ingredients

  • 1 cup fresh basil leaves
  • 1/2 cup fresh dill
  • 1/2 cup fresh mint leaves
  • 1/2 cup parsley
  • 2 small cloves garlic minced
  • 1 scallion diced
  • 3 teaspoons capers
  • 2 tablespoons lemon juice or more to taste
  • 1/4 cup olive oil
  • 1/4 cup crumbled feta cheese
  • 1/3 cup plain Greek yogurt
  • salt and black pepper to taste

Instructions

  • Remove stems from herbs then add the following ingredients to a food processor:
    basil, dill, mint, parsley, minced garlic, diced scallions, capers, lemon juice, olive oil
  • Pulse until combined then add feta cheese and yogurt. Continue blending until combined. Taste and season with salt and black pepper to your preference.
  • Serve with fresh sliced vegetables, pita chips or crackers.
