Honey Chipotle Glazed Meatloaf

Glaze Ingredients:
- ½ cup ketchup
- 1 ½ tablespoons honey
- 1 chipotle pepper finely minced plus one tablespoon of its adobo sauce
- ½ teaspoon cumin
- 2 tablespoons cilantro
- ½ tablespoon Worcestershire sauce
Meatloaf Ingredients:
- 1 pound ground chuck
- ¼ cup onion chopped
- 3 tablespoons cilantro
- ⅓ cup dry italian breadcrumbs
- 2 tablespoons milk
- 1 egg whisked
- 1 tablespoon Worcestershire sauce
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon salt
- ¼ teaspoon pepper
- ½ cup sharp cheddar cheese grated optional
- Preheat the oven to 350 degrees.In a small bowl, whisk the ketchup, honey, finely minced chipotle pepper, adobo sauce, cumin, cilantro and Worcestershire sauce then set aside. 
- In a medium mixing bowl, combine the ground beef, onion, cilantro, breadcrumbs, milk, whisked egg, Worcestershire, cumin, salt, pepper and shredded cheese. Using your hands, combine until it’s well blended.  
- Shape the meat into a loaf without packing it too tightly (packing the meatloaf too tightly dries it out) and place in the baking dish.  
- Bake uncovered 35-40 minutes or until the meat is cooked through all the way.
