Sprinkle 5-6 pomegranate seeds into each mold (the number will depend upon the size of your molds). Insert a small sprig of rosemary into each and transfer to the freezer for several hours up to overnight.
Sugar Rim
Add about 3 tablespoons of liquid to a small shallow bowl (water, cranberry juice, citrus liqueur such as Cointreau). The bowl should be just large eniough for the rim of the glass.
Add the sugar to another small shallow bowl or plate. Working one at a time, dip the rim of the glass into the liquid then gently roll the rim in the sugar. Repeat until all the glasses are rimmed. Note: this step can be done a few hours ahead. Reserve glasses in the refrigerator.
Assembling the Mistletoe Mimosas
Carefully pour cranberry juicy into each glass about 1/4 of the way up (adjust according to how strong you prefer your cocktail).
Top with prosecco leaving space at the top then add one festive ice cube to each glass and enjoy right away.
