  • 6 small rosemary sprigs
  • cranberry juice included above

  • 1/4 cup granulated sugar
  • liquid for rim of glass water, cranberry juice or citrus liqueur can be used

Instructions

Festive Ice Cubes

  • Ice cubes can be made 1-3 days ahead so they're ready when you are. Add cranberry juice to each ice cube mold leaving a little space at the top of each.
  • Sprinkle 5-6 pomegranate seeds into each mold (the number will depend upon the size of your molds). Insert a small sprig of rosemary into each and transfer to the freezer for several hours up to overnight.

Sugar Rim

  • Add about 3 tablespoons of liquid to a small shallow bowl (water, cranberry juice, citrus liqueur such as Cointreau). The bowl should be just large eniough for the rim of the glass.
  • Add the sugar to another small shallow bowl or plate. Working one at a time, dip the rim of the glass into the liquid then gently roll the rim in the sugar. Repeat until all the glasses are rimmed. Note: this step can be done a few hours ahead. Reserve glasses in the refrigerator.

Assembling the Mistletoe Mimosas

  • Carefully pour cranberry juicy into each glass about 1/4 of the way up (adjust according to how strong you prefer your cocktail).
  • Top with prosecco leaving space at the top then add one festive ice cube to each glass and enjoy right away.
