Salmon with Creamy Dill Sauce

Ingredients

THE SALMON:

  • 1/2 tablespoon olive oil
  • 2 6 ounce salmon fillets
  • salt and pepper to taste
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 whole lemon cut in wedges

THE DILL SAUCE:

  • 1/2 cup cucumber grated/skins on
  • 2 ounces cream cheese softened to room temp
  • 1/4 cup plain Greek yogurt
  • 1/4 teaspoon garlic powder
  • 1 teaspoon lemon juice or more to taste
  • 2-3 tablespoons milk
  • 1/2 teaspoon dill dry OR fresh - same amount

Instructions

DILL SAUCE:

  • If your cucumber’s seeds are large, remove them then grate the cucumber then set aside.
  • To a medium bowl, add softened cream cheese, yogurt, garlic powder, lemon juice, milk (start with 2 tablespoons) and dill.
  • Blend using a spoon or immersion blender then once it’s smooth, stir in the grated cucumber. Season with salt and pepper to taste.
  • Follow any of the cooking methods below then serve cooked salmon with a dollop of dill sauce on top and lemon wedges.

THE SALMON:

  • Brush salmon with olive oil then season with salt, pepper, garlic powder and paprika.

AIR FRY METHOD:

  • Heat air fryer to 400 degrees then lightly spray the air fryer basket.
    Place salmon in the air fryer basket and cook for 8 minutes or until it reaches an internal temperature of 145 degrees.

STOVE TOP/SKILLET:

  • Drizzle olive oil into a  large skillet over medium high heat until it shimmers.
    Carefully add salmon skin side up cooking about 4 minutes or until golden and lightly crisp.
    Turn the salmon over and continue cooking another 4 minutes or until it reaches an internal temp of 145 degrees.

OVEN/BAKING:

  • Preheat the oven to 400 degrees. Line a baking sheet with parchment paper then add salmon.
    Bake 10-12 minutes or until cooked through. Optional: broil 1-2 minutes to brown the top.
