THE SALMON:
- 1/2 tablespoon olive oil
- 2 6 ounce salmon fillets
- salt and pepper to taste
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1 whole lemon cut in wedges
THE DILL SAUCE:
- 1/2 cup cucumber grated/skins on
- 2 ounces cream cheese softened to room temp
- 1/4 cup plain Greek yogurt
- 1/4 teaspoon garlic powder
- 1 teaspoon lemon juice or more to taste
- 2-3 tablespoons milk
- 1/2 teaspoon dill dry OR fresh - same amount
DILL SAUCE:
If your cucumber’s seeds are large, remove them then grate the cucumber then set aside.
To a medium bowl, add softened cream cheese, yogurt, garlic powder, lemon juice, milk (start with 2 tablespoons) and dill.
Blend using a spoon or immersion blender then once it’s smooth, stir in the grated cucumber. Season with salt and pepper to taste.
Follow any of the cooking methods below then serve cooked salmon with a dollop of dill sauce on top and lemon wedges.
AIR FRY METHOD:
Heat air fryer to 400 degrees then lightly spray the air fryer basket.Place salmon in the air fryer basket and cook for 8 minutes or until it reaches an internal temperature of 145 degrees.
STOVE TOP/SKILLET:
Drizzle olive oil into a large skillet over medium high heat until it shimmers.Carefully add salmon skin side up cooking about 4 minutes or until golden and lightly crisp.Turn the salmon over and continue cooking another 4 minutes or until it reaches an internal temp of 145 degrees.
OVEN/BAKING:
Preheat the oven to 400 degrees. Line a baking sheet with parchment paper then add salmon.Bake 10-12 minutes or until cooked through. Optional: broil 1-2 minutes to brown the top.
