Strawberry Bread Recipe

Moist bread packed with fresh strawberries drizzled with light cream cheese glaze. No yeast or kneading required. Enjoy a slice with coffee in the morning, afternoon snack or add to your brunch menu.

Ingredients

  • 2 cups all purpose flour divided
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar firmly packed
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/3 cup vegetable oil
  • 1/4 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup plain Greek yogurt
  • 2 cups fresh strawberries diced

Cream Cheese Glaze

  • 2 ounces cream cheese softened to room temp
  • 1 tablespoon butter softened to room temp
  • 3 tablespoons milk
  • 3 tablespoons confectioners sugar
  • 1 teaspoon vanilla extract

Instructions

  • Preheat the oven to 350 degrees then grease a 9 x 5 loaf pan and set aside.
  • Dice strawberries then toss with 1/4 cup of the flour then set aside.
  • In a medium bowl blend flour, sugars, salt and baking powder.
  • To a large bowl, add eggs, oil, vanilla and yogurt. Add flour mixture a little at a time until combined then add strawberries stirring just until combined.
  • Pour the batter into the prepared pan and bake 45-50 minutes or until a toothpick inserted into the center of the bread comes out clean.

Glaze:

  • Blend cream cheese, butter (both softened to room temperature), milk, powdered sugar and vanilla until smooth and creamy.
  • Remove bread from the pan onto a wire rack and drizzle the glaze over the top of the bread.
