Strawberry Bread Recipe

- 2 cups all purpose flour divided
- 1/2 cup granulated sugar
- 1/4 cup brown sugar firmly packed
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1/3 cup vegetable oil
- 1/4 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup plain Greek yogurt
- 2 cups fresh strawberries diced
Cream Cheese Glaze
- 2 ounces cream cheese softened to room temp
- 1 tablespoon butter softened to room temp
- 3 tablespoons milk
- 3 tablespoons confectioners sugar
- 1 teaspoon vanilla extract
Preheat the oven to 350 degrees then grease a 9 x 5 loaf pan and set aside.
Dice strawberries then toss with 1/4 cup of the flour then set aside.
In a medium bowl blend flour, sugars, salt and baking powder.
To a large bowl, add eggs, oil, vanilla and yogurt. Add flour mixture a little at a time until combined then add strawberries stirring just until combined.
Pour the batter into the prepared pan and bake 45-50 minutes or until a toothpick inserted into the center of the bread comes out clean.
Glaze:
Blend cream cheese, butter (both softened to room temperature), milk, powdered sugar and vanilla until smooth and creamy.
Remove bread from the pan onto a wire rack and drizzle the glaze over the top of the bread.
