Whipped Goat Cheese Crostini

Slices of toasted baguette topped with creamy, tangy goat cheese, blackberry jam, fresh blackberries and a sprig of mint. Easy, irresistible prep ahead appetizer!

Equipment

  • large baking sheet
  • food processor or high speed blender

Ingredients

Goat Cheese and Toppings

  • 4 ounces goat cheese
  • 2 ounces cream cheese
  • 2 tablespoons olive oil
  • blackberry jam about 1/4 cup
  • 6 ounces fresh blackberries

Crostini

  • 1 whole baguette sliced in 1/2" slices
  • 2 tablespoons olive oil

Garnishes

  • fresh mint
  • Optional: drizzle of aged balsamic OR balsamic glaze

Instructions

Goat Cheese Mixture

  • To the bowl of a food processor, add goat cheese, cream cheese and a pinch of salt. 
  • Pulse a few times to break up the goat cheese then drizzle in the olive oil and blend until smooth pausing to scrape the sides. Transfer the goat cheese mixture to a small bowl.

Toasting the Baguette

  • Preheat the oven to 375 degrees. 
  • Slice baguette into about 1/2" slices then place on a baking sheet in a single layer.
  • Lightly brush each slice with olive oil then bake 4-5 minutes or until golden and lightly toasted.

Assembly

  • Remove toasted bread from the oven. Cool to room temp then top with a spoonful of the whipped goat cheese mixture.
  • Add with about a heaping 1/2 teaspoon of jam to the top of the goat cheese, then press a blackberry into the jam.
  • Top with fresh mint leaves then serve right away. Optional: add a light drizzle of balsamic vinegar (a little goes a long way!) just before serving.
