How to make Easy Chicken and Dumplings:
- Heat olive oil in a large pot or Dutch oven over medium heat. Add diced chicken, season with salt, black pepper and garlic powder. Sear on both sides then remove from the pot. Set aside.
- Melt butter in the pot. Add carrots, celery and onion. Season with salt, pepper and thyme. Cook 5-7 minutes or until vegetables are softened.
- Sprinkle flour over vegetables. Cook 1 full minute stirring constantly.
- Pour in chicken stock and half and half, continuing to stir. In a large measing cup, whisk Better than Bouillon together with warm tap water until dissolved. Add to the pot, stirring until the broth is a smooth consistency.

Make the dumplings:
- Mix flour, baking powder, parsley, salt, black pepper and garlic powder together in a medium bowl. Add milk and melted butter stirring just until combined. Don’t over mix. Dumpling dough should be thick and scoopable.
- Return chicken and any juices to the soup and peas if you’re including them.
- Use a small scooper or spoon and drop dumplings into the simmering pot leaving a little space between them.
- Cover and cook 10-12 minutes (no peeking) or until dumplings are fluffy and cooked through. Cook time will vary with size of dumplings. They’re cooked when a toothpick inserted comes out clean.
- Garnish with fresh parsley, ladle into bowls and serve right away.

Tips for making creamy Chicken and Dumplings:
- Mix dough while broth is simmering. This activates the baking powder and makes the dumplings fluffier.
- Don’t overmix the dough or the dumplings may be dense.
- Adjust cook time if you make larger dumplings.
- Keep lid on while dumplings cook – and don’t peek or stir. Trapped steam helps them cook.
Subs and variations:
- Swap rotisserie or leftover chicken. You’ll need about 2 cups diced or shredded.
- Heavy cream or whole milk can be used instead of half and half.
- Sub garlic cloves for garlic powder.
- Peas are optional. I love them but if you’re not a fan, leave them out.
- Need more than 2 generous servings? Double the recipe!
