I swear summer just started 5 minutes ago and now it’s Labor Day weekend! It’s crazy how time is flying. If you haven’t had much any chance this summer to relax with a glass of wine firmly in hand, this is your weekend because the crew at #SundaySupper is sharing their favorite recipes that require very little labor including this Smoked Salmon Spread #SundaySupper I’m serving with toasted sourdough baguette. This recipe is guaranteed to leave you with that well-deserved time for relaxation, conversation with friends and family and of course, some great food from the #SundaySupper family.
I love salmon, fresh or smoked. On a family boat trip on Lake Huron en route to Mackinac Island with my husband and (then) young children we met a fisherman at a marina where we were docked who asked if we wanted a whole, freshly caught, already cleaned salmon? Um, yes! We grilled it, basting it with a simple lemon-butter-garlic sauce and man, was it good. Funny how some things just stay in your memory bank. That was the first time I tasted salmon and since then, I eat it every chance I get!
This recipe calls for pre-smoked smoked salmon so hands up and step away from the grill or stove! It comes together in under 10 minutes — yes, UNDER 10 minutes — who can’t get on board that? If you get a chance, make it the night before. It enhances the flavor and gives you even more free time the next day!
Measure the ingredients into a medium size bowl. Schmeeear (that’s a technical culinary term – ha!) it together using a fork or spatula. Mmmmm — inhale the dill! Oh — this is important. You may think I forgot salt in the recipe — something I love almost as much as the french fries I put it on (I know, I know, a Cardinal sin!) — anyway, I did not forget salt. Smoked salmon is a bit salty anyway and the Old Bay in the recipe contains salt, so mix it up, taste it and see — and only add salt if you need some at that point.
Lovely, smoky salmon – already smoked for you. Rough chop it on the cutting board and add it to the rest of the creamy goodness. Swirl it around, blending and breaking the salmon up a bit more.
