Our favorite neighborhood restaurant puts on a good fish fry on Fridays but also makes a mean Mediterranean Nacho. Layers of toasted pita, seasoned lamb, tzatziki, tomatoes and olives. It’s one of their best dishes and is the inspiration for this dish.

If you’ve never had a Greek Nacho but enjoy the flavors of a classic Greek Salad, Greek Chicken Pita Nachos is your dish. Simple to prepare, can be served as an appetizer or main dish and has been on repeat at our house for a long time.

Substitute lamb for a more authentic Mediterranean flair if you’d like or if you happen to have some leftover or rotisserie chicken, this easy recipe just got easier.

Greek Chicken Pita Nachos Ingredients:

  • tzatziki ~ homemade or store-bought
  • Olive oil
  • chicken breasts boneless, skinless
  • Greek seasoning
  • lemon
  • chicken stock
  • red onion
  • bell pepper (any color)
  • pita or naan bread
  • Cooking spray (I used the olive oil type)
  • Sea salt
  • feta cheese, crumbled
  • tomatoes
  • English cucumber, chopped (skin on)
  • Kalamata olives 
  • dill (fresh or dry)

Greek Chicken Pita Nachos. Warm, toasted pita chips layered with seasoned chicken, Tzatziki, sauteed peppers and onions, tomatoes, cucumbers and feta cheese.

Instructions:

Drizzle about a tablespoon of olive into a skillet, season the chicken breasts with Greek seasoning and sear on both sides.

Lower the heat, squeeze the lemon juice over top of the chicken and add the stock. Cover and cook over low heat 8-10 minutes or until the chicken is cooked through.

Remove the chicken from the skillet and while it’s cooling, sauté the onions and peppers in the same skillet. When the chicken has cooled, shed it using two forks or your fingers.

Heat the oven to 375°. Cut the pita into triangles about the size of tortilla chips and place in a single layer on a baking sheet (use parchment paper or foil for easy cleanup). Lightly spray each triangle with cooking spray then add a pinch of sea salt then bake 5-7 minutes or until they’re warm and toasted.

Assemble:

You can be totally casual with this dish and assemble it right on the baking sheet or if you’d prefer, transfer the chips to a platter and top with chicken, onions, peppers, feta cheese, tomatoes, cucumber, olives and tzatziki. Garnish with a sprinkle of dill and serve with extra tzatziki on the side.

Greek Chicken Pita Nachos is a simple, fingers-only dish. It’s ideal when you want a light, fun dinner any night, even in front of the TV Netflix bingeing. Like this layered dip it’s also a delicious healthy option for a Super Bowl gathering.
