Watermelon Feta Blueberry Bites – quick and easy 4 ingredient appetizer loaded with fresh summer flavors!

What do I need to make Watermelon Feta Blueberry Bites?

- seedless fresh watermelon: see how to choose the best watermelon below
- block of feta cheese: gives a tangy balance to the sweet watermelon
- fresh blueberries: compliments the flavor of the watermelon
- fresh mint leaves: herbs elevate anything
- balsamic reduction or balsamic vinegar (optional): sweet-tangy sauce for a nice finish
- toothpicks: use toothpicks with a little ‘handle’ or grip at the top.
HOW TO MAKE WATERMELON FETA BLUEBERRY BITES:
Cut watermelon into approximately equal 1″ cubes then transfer to a large bowl.
Blot excess moisture from the feta then cut into cubes slightly smaller than the watermelon.
To assemble, skewer one small mint leaf, a single blueberry, then a feta cube and finish with a watermelon cube discarding watermelon juice. Repeat until all ingredients are used.
Place assembled skewers onto a platter.

Optional: drizzle with balsamic reduction then serve immediately. NOTE wait to drizzle balsamic until just before serving.

Look for a watermelon that seems heavy for its size, has a dull green rind and a yellow spot on one area (proof that it was on the ground and ripened on the vine).
