Homemade Banana Nut Bread

Homemade Banana Bread – moist, delicious and easy to make! Loaded with bananas and nuts. This is a family favorite recipe I’ve been making for decades!

This really is the Best Banana Nut Bread. It’s my spin on a recipe I found years ago in my well-loved Fannie Farmer cookbook that’s been dog-eared, has writing in the margins and even drops of food on recipes I’ve made countless times.

I usually buy a bunch of bananas every week from the grocery store to slice in cereal or just for an afternoon pick-me-up, but I’ve been known to buy way more than I know we’ll eat because it gives me a good reason (as if I need one!) to make the Best Banana Nut Bread ~ moist, nutty and loads of banana flavor.

I tell myself the addition of Greek yogurt makes it a healthy option but any way you slice it with a big mug of hot coffee, it just starts the day off right.

CAN I FREEZE BANANAS?

The Best Banana Nut Bread hits the spot mid-afternoon with tea (also hot), especially on a cold, rainy day.

This recipe has everything I love about Banana Bread ~ nutty, banana-y (is that a word? And moist. One day I’m going to make a list of the Top Ten Recipes everyone should know how to make. The Best Banana Nut Bread will definitely be on that list.

HOMEMADE BANANA BREAD INGREDIENTS:

  • 3 overripe bananas
  • 2 eggs
  • ¾ cup of sugar + 1 tablespoon of sugar, divided
  • 1 teaspoon of vanilla
  • ½ cup of plain Greek yogurt
  • 2 cups all-purpose flour
  • ½ teaspoon of salt
  • 1 teaspoon of baking soda
  • ½ cup of pecans

HOW TO MAKE HOMEMADE BANANA BREAD:

Preheat the oven to 350° then grease a loaf pan.

In a medium size bowl, mash the bananas with a fork. You can make the Best Banana Nut Bread with three bananas, but that fourth banana is what catapults it into the ‘best’ category.

Add the eggs and yogurt, combining. The battery will be lumpy with small chunks of banana.

Stir in the flour, ¾ cup of sugar, salt and baking soda and when it’s combined, fold in the pecans.

Pour the batter into the pan and bake 45-50 minutes (times vary depending on ovens) or until a butter knife inserted in the center comes out clean.

HOW LONG DOES HOMEMADE BANANA BREAD LAST?

If you notice your bananas have gotten overripe, don’t throw them away!

Peel and transfer to a freezer-safe zip top bag removing any excess air and store in the freezer up to 3 months (you can store them whole or cut in chunks).

Ingredients
  

  • 3 very ripe bananas
  • 2 large eggs
  • 3/4 cup sugar + 1 tablespoon, divided

  • 1/3 cup plain Greek yogurt

Instructions
 

  • Grease a loaf pan and set it aside.
  • Peel and add bananas to a medium bowl. Use a fork to mash the bananas (I like to leave them a little chunky).
  • Add eggs and yogurt, stirring well to combine (batter will be lumpy with small chunks of banana.
  • Stir in the flour, ¾ cup of sugar and baking soda. Once it's combined, stir in the pecans.
  • Pour the batter into the prepared pan. Sprinkle the remaining tablespoon of sugar evenly over the top.
  • Bake at 350 45-50 minutes or until a butter knife inserted in the center comes out clean. Remove from the oven and cool on a wire rack.
