What do I need to make Coconut Shrimp?
Here’s the full recipe for my air fryer homemade Coconut Shrimp. Air frying is a great option to make some of my favorite dishes healthier.
- air fryer
- jumbo shrimp peeled and deveined (1 pound tails on)
- all purpose flour (1/2 cup)
- Old Bay Seasoning (1 teaspoon)
- large eggs (2)
- shredded coconut (1 cup -unsweetened used but can use sweetened)
- panko breadcrumbs (1/2 cup)
- cooking spray
How to make Air Fryer Coconut Shrimp:
Preheat the air fryer to 360 degrees then lightly spray the air fryer basket with cooking spray.
Line a baking sheet with parchment paper or wax paper then set up a dredging station:
- First bowl, combine flour and Old Bay seasoning.
- Second bow, whisk the eggs.
- Third bowl, blend the coconut and panko breadcrumbs together.
Dredge the shrimp into the flour mixture and shake off any excess flour.
Next dip the shrimp into the eggs then dredge in the coconut/panko mixture and transfer to the prepared baking sheet.
Spray each piece of shrimp with cooking spray then transfer to the air fryer basket leaving a little space between them (work in batches if necessary).
Cook 9-12 minutes or until golden brown, turning them over halfway through cooking.
Remove from the air fryer, lightly sprinkle with salt. Garnish with chopped parsley and serve this crunchy shrimp right.
Orange Dipping Sauce:
- 1/4 cup orange marmalade (can use preserves or jam)
- 2 tablespoons Thai chili sauce
- 1/2 tablespoon soy sauce
- 2 tablespoons lemon juice
Add sauce ingredients to a small bowl. Stir to combine well then set aside.
