I’m usually a wine drinker but there’s something about summertime and the over abundance of everything from sunshine to fresh produce that practically begs for a cold, fruity cocktail like this Raspberry Mojito.

Lightly sweet with plenty of full-on raspberry and mint flavors along with a squeeze of lime to bring it all together. So, so good they should almost come with a warning.

Why I love this recipe:

I tasted my first classic Mojito years ago in Key West where there seems to be a 24/7 vacation vibe and breathtaking sunsets.

Those cocktails serve as the inspiration for these Raspberry Mojitos – rum-based cocktails with a burst of summer fruit flavor. They’re also a great venue for the overabundance of mint I happen to have right now.

What’s in a Raspberry Mojito?

This recipe makes two cocktails. Double or triple the recipe for more.

  • Havana Club or other good quality white rum
  • granulated sugar
  • mint leaves
  • whole lime thinly sliced
  • club soda
  • fresh raspberries
  • muddler

How to make a Raspberry Mojito:

Add three thin slices of lime to the bottom of a short glass then sprinkle on the sugar and add the mint leaves and raspberries.

Muddle the lime, sugar, mint and raspberries together by placing the muddler in the glass and pressing down gently on the leaves giving it 6-8 twists (don’t over muddle or the mint will become bitter).

    How to make a Classic Mojito:

    To make a classic Mojito, follow the simple steps above leaving out the raspberries.

    Give it a good stir and enjoy right away.

    Subs and variations to this recipe:

    1. Any good quality white rum works well in this recipe.
    2. See instructions above for a Classic Mojito.
    3. Sub other fresh fruit for raspberries, like blackberries, strawberries or mango.

    What to serve with Mojitos:

    Homemade Guacamole – with fresh avocado, lime juice, cilantro, red onion and jalapeno.

    Fresh Salsa (Pico de Gallo) – light, spicy fresh tomato raw salsa.

    Buffalo Ranch Snack Mix – crunchy, salty Chex cereal, Cheese-Its, Goldfish crackers, peanuts and Melba toast tossed Buffalo Ranch flavors.

    Ingredients
      

    • 2 shots (1 ½ ounces each) of Havana Club or other white rum
    • 4 teaspoons granulated sugar
    • 6-8 mint leaves + extra for garnish
    • 1 lime thinly sliced
    • Club soda
    • 10-12 raspberries + extra for garnish

    Instructions
     

    • Add three slices of lime to the bottom of a short glass then sprinkle on the sugar and add the mint leaves and raspberries.
    • Muddle the lime, sugar, mint and raspberries together by placing the muddler in the glass and pressing down gently on the leaves giving it 6-8 twists (you don't want to over muddle or the mint can become bitter).
    • Add the rum and ice, top it off with club soda then stir well and garnish with extra berries, a couple of sprigs of mint and a slice of lime. Serve right away.
