Ingredients needed for this Sausage Skillet:
- olive oil
- butter
- smoked sausage (like kielbasa) or any sausage you prefer
- large red bell pepper (or other color/green peppers)
- onion
- garlic powder
- Yukon gold potatoes
- salt and black pepper
- dry italian seasoning
- optional: 2 cups fresh kale or spinach
How to make Sausage, Potato and Peppers Skillet:
Prep:
Slice the sausage about 1/2 thick.
Dice the potatoes, onions and peppers into about 1/2″ cubes (potatoes can be peeled or not – your choice).
Drizzle olive oil into a large skillet over medium heat. Add sausage slices in a single layer.
Cook 2-3 minutes on the first side then flip and continue cooking another 2 minutes until browned then remove from the skillet to a plate.
Add the potatoes, onions, peppers and butter to the same skillet.
Season with Italian seasoning, garlic powder, black pepper and a generous pinch of salt.
Cook 8-10 minutes or until potatoes are golden brown and fork tender stirring occasionally. If your potatoes are golden but not yet tender, splash in a little water and continue cooking.
Optional: drop in kale or spinach. Cook 1-2 minutes letting it wilt.
Return the smoked sausage to the skillet then cook 2 minutes to reheat the sausage and let the flavors come together. Serve right away.
Subs and variations to this recipe:
- Swap other sausage: hot Italian sausage, turkey sausage, pork sausage, Cajun, andouille or even chicken sausage would also be delicious.
- Add more vegetables: sliced green beans, zucchini, mushrooms, swap spinach for kale.
- Potatoes: any potatoes work well – yukon gold potatoes, red skin – even sweet potatoes
- Other color peppers can be used including green peppers.
- Garlic cloves (minced) instead of garlic powder.
- Fresh herbs (thyme, rosemary or dill) – any would be great add.
- Cheese – added at the end – cheddar cheese, parmesan cheese, mozzarella.

- 1 tablespoon olive oil
- 1 tablespoon butter
- 14 ounces smoked sausage or any you prefer!
- 1 1/2 pounds yukon gold potatoes cut in 1/2" cubes
- 1 large bell pepper
- 1 small yellow onion diced
- 1/2 teaspoon garlic powder
- salt and black pepper
- 1 teaspoon dry Italian seasoning
OPTIONAL:
- 1 1/2 cups fresh kale or spinach thinly sliced/shredded

PREP:
- Slice sausage about 1/2″ thick.
- Dice the potatoes, onions and peppers into 1/2″ cubes. I left the peel on the potato but peel if you prefer.
- Drizzle olive oil into a large skillet over medium heat. Add sausage slices in a mostly single layer.
- Cook 2-3 minutes to golden on the first side then flip them over and cook another 2 minutes until browned then remove from the skillet to a plate.
- Add the potatoes, onions, peppers and butter to the skillet with the sausage drippings.
- Sprinkle on the Italian seasoning, garlic powder, black pepper and a good pinch of salt. Cook 8-10 minutes or until potatoes are golden brown and fork tender stirring occasionally. NOTE: If your potatoes are golden but not yet tender, splash in a little water and continue cooking.
- Reduce heat to low add OPTIONAL: kale or spinach and cook 1-2 minutes until it's wilted in.
- Return the sausage to the skillet then cook 2 minutes to reheat the sausage and let the flavors come together.
