Marinated, juicy flank steak is one favorite steaks to grill. It’s tender and jam-packed with delicious flavor.
It’s always a hit with my family and one of the most popular recipes on the blog.

WHAT DO I NEED TO MAKE MARINATED FLANK STEAK?
- 1 1/2 to 2 pound flank steak
- sea salt or kosher salt
Flank Steak Marinade:
- 3 tablespoons olive oil
- 3 tablespoons balsamic vinegar
- 3 tablespoons soy sauce
- 1 tablespoon honey
- 3 large garlic cloves
- 1/2 teaspoon black pepper
HOW TO MARINATE FLANK STEAK:
The tenderizing effects of a marinade are almost magical for the most flavorful cut of beef. No joke.
Here’s all you do:
Whisk marinade ingredients together in a small bowl. Place steak in a large ziplock bag then pour marinade over the top. Seal and refrigerate at least 2 hours up to 8 hours.
HOW TO GRILL FLANK STEAK:
Take steak out of the fridge 15-30 minutes prior to cooking to let it come to room temp.
Remove steak from the bag and discard marinade. Use paper towels to blot excess moisture from the steak then generously sprinkle salt on both sides.
Preheat grill to high heat (450 degrees). Place steak on the hot grill. Cook 4-5 minutes on the first side then flip and continue grilling 3 minutes more on the other side to your preferred level of doneness. Note: grilling time may vary with the size of your steak.
Transfer to a cutting board and let the steak rest 5-10 minutes then use a sharp knife to cut into thin slices.
HOW TO SLICE FLANK STEAK SO IT’S TENDER EVERY TIME:
Flank steak is a very lean cut of beef and when cooked and sliced right, it’s one of the most delicious cuts you’ll ever have.
Slice the flank steak against the grain of the meat.

TIPS, SUBS AND VARIATIONS:
- Sub skirt steak if you can’t find flank steak. It’s thinner – adjust cooking time accordingly.
- Use garlic powder instead of garlic cloves in the marinade.
- Using a meat thermometer is the best way to tender, juicy steak every time.
- For best results I don’t recommend cooking steak to well done (it may be dry and tough).
INTERNAL TEMPERATURE CHART:
My preferred temp for beef flank steak is 130-135 degrees (medium rare). Note: the steak will continue to cook a few more degrees while it rests before cutting.
